    I'm noy a huge fan of zucchini. I see it all over the place in this
    area. From tiny cucumber sized to huge cricket bat squashes. It's a
    mystery to me what it is avout zucchini that puts me off. I do like
    other varieties just fine. I even like the gourd shashes.

    Title: Bitter Gourd Curry w/Raw Mango
    Categories: Squash, Herbs, Curry, Fruits, Chilies
    Yield: 5 Servings

    MMMMM---------------------------CURRY--------------------------------
    3 Pieces bitter gourd; diced
    - small
    1 lg Raw mango; diced medium
    2 md Onion; diced small
    1 tb Red chile powder
    1/2 tb Turmeric powder
    1 lg Piece jaggery
    Salt

    MMMMM-------------------------TO TEMPER------------------------------
    2 tb Oil
    1 tb Mustard seed
    1 tb Cumin seed
    1 tb Asafoetida (Hing)

    Peel the bitter gourd and onion; cut in to small pieces.
    Also cut raw mango with skin into medium pieces.

    Heat the oil in thick bottom pan. Add mustard seed,
    cumin seed and hing in it.

    While seeds are tempering, add cut bitter gourd pieces.

    Cook the bitter gourd pieces until they become crispy.

    Then add cut onion pieces and cook for just 2 or 3 mins.
    (Onion transparent not golden brown) on medium flame.

    Add raw mango pieces on medium flame.

    When mango pieces become soft then add all remaining
    masala to pan.

    Mix all masala very well and string constantly for two
    minutes over low flame.

    Turn off the fire and serve hot with Roti and Curd.

    NOTE: If you don't like taste of bitter gourd then you
    may like this dish made with enjoy with Black plum or
    Jamun.
