1 1/2 c Unbleached white flour
1 1/2 c Whole wheat pastry flour
1 ts Baking powder
1/2 ts Salt
2 Eggs
3/4 c Honey
1/4 c Butter; melted
3/4 c Milk
1/2 c Orange juice
1 1/4 c Raw cranberries; chopped
3/4 c Walnuts; chopped
The cranberry and orange juice combination gives this bread just the
right amount of tartness. The red berries make it festive for the
Christmas holidays.
Mix dry ingredients together. Beat eggs in separate bowl; add honey
and melted butter, then milk and orange juice. Mix dry and wet
ingredients together. Fold in berrie and nuts. Pour into oiled 9x5"
loaf pan. Bake 1 hour at 325°F or until golden and a toothpick comes
out clean. Cool in pan for at least 10 minutes. Loosen around edges
of pan with a knife before removing.
