Title: Chicken And Apple Sausage

Yield: 1 Batch
1 c Apple cider
3 1/2 lb Chicken thighs;
- boned, very cold *
3 oz Dried apples
4 ts Kosher salt
2 ts Freshly ground pepper
2 ts Dried sage
1/8 ts Ground cinnamon
1/8 ts Ground nutmeg
1/4 ts Ground ginger
2 tb Chicken concentrate;
- used to make bouillion
md Sausage casings (10')
- (optional)
* 4 1/2 lb with bones.
In a small non-reactive saucepan, boil down the cider almost to a
syrup, about 2 to 3 tb.
Cool and reserve.
Coarsely chop chicken in food processor.
Add apple cider syrup and the remaining ingredients to the chicken in
a large bowl and blend thoroughly with your hands.
Fry a small patty until done and adjust seasoning if necessary.
Stuff into casings if desired.
