Title: Ever Ready Made Muffins

Yield: 60 Muffins
1 Box Fruit & Fiber cereal
- (raisin, date & walnut)
5 c All-purpose flour
3 c Sugar
1 tb Baking soda; +2 ts
2 ts Salt
4 Eggs; beaten
1 qt Buttermilk
1 c Vegetable oil
Combine the first 5 ingredients in a large bowl. Make a well and add
eggs, oil, and buttermilk. Stir just enough to moisten. Fill muffin
pans half full and bake at 375?F for 15 to 18 minutes.
The batter can be stored in a covered container in the refrigerator
for up to 6 weeks. Although the recipe calls for the raisin, date &
walnut Fruit & Fiber, we prefer the peach & almond variety.
