Title: Apricot Chutney

1 2/3 c Sugar
1 2/3 c Cider vinegar
20 lg Ripe apricots
7 Sweet red peppers; chopped
3 md Onions; chopped
1 cl Garlic; minced
4 oz Candied ginger; chopped
1 ts Salt
1 c Seedless blonde raisins
1 Orange; peel & pulp, chopped
1 Lemon; peel & pulp, chopped
2/3 c Almonds; blanched & slivered
1 ts Ginger powder
Boil apricots with sugar and vinegar for 10 minutes. Skim. Add
remaining ingredients except almonds and ginger powder. Cook 30
minutes, stirring frequently. Add almonds and ginger powder and cook
another 30 minutes, stirring frequently. Pack in sterilized jars and
seal immediately.
