Title: Santa Fe Super Chief French Toast

3 sl Homemade-type bread
4 lg Eggs; slightly beaten
1 c Half & Half
pn Salt
Oil
One of the best menu items on Santa Fe's famous
streamliner, The Super Chief, was French Toast.
Use firm homemade-type of bread. Trim crusts and cut
diagonally into triangles. Combine eggs, half and half,
and salt. Dip bread in mixture allowing pieces to absorb
as much liquid as possible. Fry in about 1/2" cooking oil
heated to 325ºF/163ºC.
When brown on one side, turn and brown second side. Place
on baking sheet and allow to puff in 400ºF/205ºC oven for
3 to 5 minutes. Drain on paper towels to absorb excess
fat. Sprinkle with confectioners' sugar and serve
immediately with applesauce, jelly, honey, or syrup.
