Title: Skillet Chicken w/Olives

Yield: 4 servings
1 lb Boned, skinned chicken
- thighs
1 ts Dried rosemary; crushed
1/2 ts Pepper
1/4 ts Salt
1 tb Olive oil
1/2 c Pimiento-stuffed olives;
- coarse chopped
1/4 c White wine
1 tb Drained capers; opt
Sprinkle chicken with rosemary, pepper and salt. In a
large skillet, heat oil over medium-high heat. Brown
chicken on both sides.
Add olives, wine and, if desired, capers. Reduce heat;
simmer, covered, 2-3 minutes.
