    Title: Layered Polenta Chili Casserole

    Yield: 6 Servings

    4 c Water
    1 tb Vegetable oil
    1 1/2 ts Salt
    1 1/2 c Yellow corn meal;
    - medium-ground
    2 1/2 c Chili; your favorite
    1 c Tomato salsa
    1 c Vegan mozarella;
    - shredded -OR-
    1 c Cheesy Sauce

    In a large saucepan, combine the water, oil, and salt over high heat
    and bring to a boil. Reduce the heat to medium and gradually whisk in
    the corn meal, stirring constantly to avoid lumps. Cook, stirring,
    until the polenta begins to pull away from the sides of the pan,
    about 20 minutes.

    Preheat the oven to 350?F. Lightly oil a 9x13" baking dish. Spoon
    half of the polenta into the dish and smooth the surface with a wet
    rubber spatula. Spread the chili on top. Spoon the remaining polenta
    on top of the chili, top with the salsa, and sprinkle evenly with the
    vegan mozzarella. Bake until hot, about 30 minutes.
