Title: Potato Sausage

Yield: 20 Pounds
4 1/2 lb Lean pork; boiled with:
Onion
Salt
8 sl Bread; diced
11 1/2 lb Raw potatoes; grated
1 lb Potatoes; cooked, riced
1 1/2 lb Cracklings
Marjoram; to taste
Thyme; to taste
1/4 c Flour; to thicken
Remove the onion from the broth, then soak about 8 slices of diced
bread in the broth. Stuff into casings. Bake in the oven to serve.
